This Summer, the idea for our White Truffle Olive Oil took root in the forests of Forcoli, Italy, where my mother and I joined the Savini family, who have been Truffle-hunting these woods for generations. Led by Luca Campinotti and his trio of extraordinary dogs, we spent the morning slipping through dappled light and fallen leaves, watching the dogs circle and scratch, then gently unearth the treasure below. The scent of warm earth and oak leaves, the thrill of discovery — became the genesis of this Olive Oil.
White Truffles are nature’s greatest riddle. Their season is fleeting, their growth a mystery — hidden beneath Oak and Hazelnut trees, found only by instinct, patience, and the keen noses of trained dogs. They refuse cultivation, appearing only where the soil and rain conspire just right. That uncertainty is their magic: the wildness that cannot be tamed.

When burning your candle for the first time, allow it to burn for 2 to 3 hours, until the top layer of the wax has completely melted. This will prevent the wax from tunneling around the wick. When burning the candle after the first burn, do not let it burn for over 3 hours at a time.
Ideally, we recommend keeping the wick trimmed to 1/4 inch at all times to prevent the candle from emitting smoke or the wick falling into the wax.
After each burn, see that the wick is centered in the wax. This will also ensure that the glass does not overheat. The wick and flame should never be touching the glass. When approaching the end of the candle, leave ¼ inch of wax unburned and ensure you are not burning the candle for more than 3 hours. The glass can get overheated without the presence of wax and break.
